Mead has been made in Wales since at least A.D. 600 and probably continued and elaborated the Roman tradition of drinking wine sweetened or partially fermented with honey. Mead came to have an important role in Welsh courtly society in the middle ages and it is mentioned with great frequency in the poetry of the time.
New Quay Honey Farm Mead is a link with that tradition. Our mead is naturally fermented in our purpose built meadery at ordinary summer temperatures to retain a fresh honey taste in the final product and it is then matured in oak barrels for between three and six months before bottling. The aim is to produce a honey wine with a complex bouquet and flavour as well as the taste and goodness of pure honey. For this reason the method is kept as simple as possible to ensure that the original flavour of the honey comes through.
The mead is produced as a pure honey mead and also as a fruit meads where fruit juices are added to to the basic must to produce a range of meads where the flavour of the fruit and the honey combine to make a uniquely delicious wine. The result is a modern style of wine with a full flavour and a unique taste that has links with the Wales of the Welsh Princes, the mead hall and medieval poetry.
The honey Beer is made for us by a local traditional brewery and revives a tradition of enhancing the flavour (and strength) of the beer. The amount of honey used is relatively small, but a subtle flavour is imparted to the beer. This beer is not sweet.
